Coming out tasty, crispy and flavorful, these Mexican tacos are loved by both kids and adults. This does happen with my family!

I first tasted these spicy chicken tacos at my friend’s weekend gatherings. She treated us with these and well all fell for them. As a homemade food lover, I did not hesitate to aske her for the recipe. Luckily, they got my family hooked right with the first try. My kids even prefer them for game day viewing parties at home. I make a great job, right?

If you are big fans of chicken tacos, you should never miss these baked spicy chicken tacos for meals. Ready in 25 minutes (15 for preparing and 10 for baking), these tacos are great for busy weekday’s dinners. To best serve, you can eat them with toppings of your choice, (jalapenos, sour cream, cilantro, and salsa,..). Let’s give them a try!

Oven Baked Spicy Chicken Tacos are Taco shells stuffed with layers of refried beans, taco chicken mixture and shredded Mexican blend cheese, respectively.

Ingredients

  • 1/2 pound cooked chicken, shredded

  • 1 ounce Taco Seasoning, homemade or store bought

  • 10 stand and stuff taco shells

  • 2 cups Mexican blend cheese, shredded

  • 1 can diced tomato 14.5 ounce, fully drained

  • 1 can chopped green chiles 4.5 ounce, fully drained

  • 1/2 can (8oz) refried beans

  • 1/2 cup onion, diced

  • 1 tablespoon olive oil

Directions

  • Preheat oven to 400 degrees F. Grease a 9×13 baking dish with nonstick spray.
  • Heat olive oil in a medium skillet over medium heat.
  • Add onion, stir and cook until translucent and fragrant, for 2-3 minutes.
  • Stir in chicken, taco seasoning, tomatoes, and green chiles. Stir to well combine. Reduce to simmer and continue to cook for 5-8 minutes.
  • Place taco shells in the baking dish, standing up. Bake for 5 minutes by themselves to crisp up. Remove from the oven.
  • Spoon 1 tablespoon of beans into bottom of each taco shell. Top with chicken mixture and sprinkle generously with shredded cheese.
  • Return to oven and bake for 7-10 minutes, until cheese is fully melted and edges of are browned.
  • Remove. Top with toppings of your choice (jalapenos, sour cream, cilantro, and salsa,..)
  • Enjoy!
