BLT chicken avocado Feta salad defines by BLT salad (as a base) and a layer of balsamic chicken. It finishes off with sliced avocado, crumbled Feta and generous drizzle of balsamic dressing. It comes out tasty and flavorful.

Ingredients

  • For Marinade
  • 1/3 cup balsamic vinegar

  • 2 teaspoons Italian seasoning

  • 1/4 cup olive oil

  • 2 teaspoons minced garlic

  • 1 teaspoon honey

  • 1/4-1/2 teaspoon salt

  • 4 skinless and boneless chicken thigh fillets (or breast fillets)

  • 2 tablespoons water (or more oil if you wish)

  • For Salad
  • 5 ounces bacon, diced and trimmed

  • 1/4 cup crumbled feta cheese

  • 1 avocado, sliced

  • 8 cups mixed salad lettuce leaves

  • 2 tomatoes, chopped

  • 1 red onion, thinly sliced

  • extra Italian seasoning

  • salt and pepper, to taste

Directions

  • Gather all ingredients for marinade, except for chicken in a mixing bowl. Whisk to well combined.
  • Pour 2-3 tablespoons into a shallow bowl. Add chicken thighs and coat evenly on both sides. Season with salt and pepper; set aside for 10 minutes.
  • Fry bacon until crisp in a skillet over medium-high heat. Transfer to a plate. Wipe pan over with paper towel.
  • Cook chicken fillets until crisp and cooked through, about 7 minutes each side.
  • To assemble, add all salad ingredients in a large bowl. Top with bacon, chicken, avocado.
  • Sprinkle with feta, extra Italian seasoning. Season with salt and pepper to tastes. Drizzle with the remaining dressing.
  • Serve!
