I love cutting the carbs in meals sometimes. Cauliflower fried rice with chicken is on the menu. Riced cauliflower combined with diced cooked chicken, along with frozen peas and carrots, garlic, scrambled eggs, sesame oil, and soy sauce. Ingredients

  • 1 small head of cauliflower

  • 1 1/2 cups shredded or diced cooked chicken

  • 2 large eggs

  • 1 1/2 cups frozen peas and carrots

  • 2 tablespoons sesame oil

  • 1 small white onion, chopped

  • 2 cloves garlic, minced

Directions

  • Rinse and drain cauliflower. Cut into large chunks.
  • Pour cauliflower into a food processor, 2-3 batches. Blend until cauliflower is broken down and resembles rice pieces, about 10-15 pulses.
  • Transfer cauliflower rice to a bowl and continue with remaining batches.
  • Heat sesame oil in a large skillet over medium heat. Add onion and sauté for 3-4 minutes, until softened.
  • Add peas, carrots, and garlic. Stir and cook until tender, about 2-3 minutes.
  • Crack eggs into pan, scramble into small pieces and mix with vegetables.
  • Stir in chicken, cauliflower rice and soy sauce. Toss to well combined and heated through, about 2-3 minutes more.
  • Turn off heat and serve with extra soy sauce, if desired.
  • Enjoy!
