12 cups spinach leaves
4 eggs, hard boiled, peeled and chopped
4 cooked crispy bacon slices, cooled and crumbled
1 clove garlic
2 tbsp. red wine vinegar
1 tbsp. Dijon
3 tbsp. extra-virgin olive oil
1/2 tsp kosher salt
Freshly ground pepper to taste
- Smash and peel garlic clove. Mince and mash with salt form a paste; using side of a chef’s knife.
- Pour into a medium bowl. Whisk in vinegar and Dijon. Add in oil. Season with pepper and set aside.
- Gather spinach, eggs and bacon in a large salad bowl. Mix to combine.
- Drizzle garlic dressing over salad. Toss to combine.
