2 cups cucumber, peeled, seeded and chopped
3 cups cooked cut corn
2 tablespoons light mayonnaise
1/2 cup basil, chopped
1/4 cup chives, snipped
Salt & fresh ground pepper, to taste
Directions
- Add corn, cucumber, basil and chives in a medium mixing bowl. Toss to combine. Stir in mayonnaise. Season with salt and pepper to taste.
- Serve immediately or cover and chill in the fridge until serving time.
