Ingredients

3 pounds cucumbers, sliced and peeled
18 ounces light sour cream
1 small yellow onion, chopped fine
3/4 cup white distilled vinegar
1 tbsp. granulated sugar
1 tbsp. dried dill weed (or 2 teaspoons fresh chopped dill)

Directions

Peel cucumbers, cut into slices and set aside. Chop onion finely.
Gather sour cream, vinegar, sugar, and dill in a medium-size mixing bowl. Stir to combine. Taste and adjust vinegar and sugar if needed.
Add cucumbers and onions in bowl and mix well.
Cover and refrigerate for at least one hour before serving.
