3 pounds cucumbers, sliced and peeled
18 ounces light sour cream
1 small yellow onion, chopped fine
3/4 cup white distilled vinegar
1 tbsp. granulated sugar
1 tbsp. dried dill weed (or 2 teaspoons fresh chopped dill)
- Peel cucumbers, cut into slices and set aside. Chop onion finely.
- Gather sour cream, vinegar, sugar, and dill in a medium-size mixing bowl. Stir to combine. Taste and adjust vinegar and sugar if needed.
- Add cucumbers and onions in bowl and mix well.
- Cover and refrigerate for at least one hour before serving.
