6 cups cucumber, chopped
1 small red onion, thinly sliced
2 tbsp. fresh dill, chopped
1/2 cup sour cream
1 tbsp. olive oil
1 tbsp. lemon juice
1/2 tsp garlic powder
1/2 tsp sea salt
1/4 tsp black pepper
- Gather sour cream, dill, olive oil, lemon juice, and garlic powder in a large mixing bowl. Stir to combine.
- Season with sea salt and black pepper to taste.
- Stir in chopped cucumbers and red onions. Cover with plastic and let it sit at room temperature for at least 30 minutes.
- Serve and refrigerate leftovers for up to 3 days.
