Ingredients

  • For Steak
  • 2 pounds top sirloin steak

  • 2 cups beef broth

  • 1 large onion, sliced

  • 1/2 tsp garlic powder

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • For Cheese Sauce
  • 4 tbsp. butter, divided

  • 2 tbsp. flour

  • 1/2 cup milk

  • 1 tsp salt

  • 1/2 tsp pepper

  • 1/2 tsp dijon mustard, optional

  • 1/4 tsp hot sauce, optional

  • 3/4 cup shredded cheddar cheese

  • 4 hoagie rolls, for serving

Directions

  • For Steak
  • Place steak into the freezer for 30 minutes to make it easier to slice.
  • Preheat an instant pot to saute.
  • Cut steak into thin strips. Season with garlic, salt, and pepper.
  • Add tablespoons of butter to instant pot. Add steak, onion, and peppers and saute for 5 minutes; stirring occasionally.
  • Turn off instant pot. Pour in beef broth and stir well; using a wooden spoon.
  • Cover with a lid and set to sealing. Cook on manual/high for 6 minutes.
  • Allow the pot to come to pressure naturally for 10 minutes before removing the lid.
  • For Cheese Sauce
  • Melt butter in a medium saucepan over medium heat.
  • Sprinkle flour over butter, cook and stir for 1 minute.
  • Slowly whisk in milk. Turn the heat to low and simmer for about 3 minutes until thick. Whisk in salt, pepper, dijon mustard, and hot sauce.
  • Remove from heat and stir in cheese until melted.
  • Remove steak from instant pot with a slotted spoon, discarding the broth.
  • Serve steak mixture in hoagies topped with cheese sauce as desired. Enjoy!
