Ingredients

  • 1/2 head cabbage, chopped in 1 1/2″ chunks

  • 8 cups low sodium chicken broth vegetable broth fine too

  • 4 carrots, peeled and chopped

  • 2 stalks celery, sliced thinly

  • 14.5 oz stewed tomatoes

  • 3 tbsp. olive oil

  • 1/2 yellow onion, chopped

  • 2 cloves garlic minced

  • 1 tsp kosher salt

  • 1/2 tsp dried thyme

  • 1/2 tsp black pepper or to taste

Directions

  • Heat olive oil in a large pot over medium heat.
  • Add in onions and garlic, and cook until the onions are translucent, about 3-5 minutes.
  • Stir in broth, salt, pepper, cabbage, carrots, celery and tomatoes. Bring to simmer for 30 minutes.
  • Garnish with parsley. Serve warm.
