Veggie Cabbage Soup

1/2 head cabbage, chopped in 1 1/2″ chunks
8 cups low sodium chicken broth vegetable broth fine too
4 carrots, peeled and chopped
2 stalks celery, sliced thinly
14.5 oz stewed tomatoes
3 tbsp. olive oil
1/2 yellow onion, chopped
2 cloves garlic minced
1 tsp kosher salt
1/2 tsp dried thyme
1/2 tsp black pepper or to taste
- Heat olive oil in a large pot over medium heat.
- Add in onions and garlic, and cook until the onions are translucent, about 3-5 minutes.
- Stir in broth, salt, pepper, cabbage, carrots, celery and tomatoes. Bring to simmer for 30 minutes.
- Garnish with parsley. Serve warm.
