Ingredients

  • 1 (20oz) package shredded hash browns, thawed

  • 8 eggs

  • 1 cup cheddar cheese

  • 1 pound bacon strips, chopped

  • 1 small onion, chopped

  • salt and pepper, to taste

Directions

  • Cook bacon in a large nonstick skillet over medium heat until it starts releasing a bit of fat.
  • Add in chopped onions. Season with salt and pepper and cook until bacon is just crispy and onions are soft.
  • Drain excess bacon fat, just leaving about 1/4 cup left in pan.
  • Stir in hash browns. Cook over medium heat, uncovered for about 8-10 minutes until light golden brown on the bottom.
  • Make 8 wells in hash browns; using end of a spoon.
  • Crack an egg into each. Season with a bit of salt and pepper.
  • Cover, reduce heat to low, and cook for another 10 minutes until eggs are set.
  • Remove lid, sprinkle with shredded cheese and cook until melted.
  • Remove from heat and let cool few minutes. Serve!
