Ham, Egg and Cheese RollUps

Actually my family, especially my picky kids can’t. They fell for them right at the first time they tasted them. I made a good job, right?

Ingredients

  • 10 eggs

  • 20 ham slices

  • 1 1/2 cup shredded cheddar

  • 1 cup baby spinach

  • 1 cup chopped tomatoes

  • 2 tsp. garlic powder

  • 2 tbsp. butter

  • Kosher salt

  • Freshly ground black pepper

Directions

  • Preheat a broiler.
  • Crack eggs in a large bowl. Whisk in garlic powder until combined. Season with salt and pepper.
  • Melt butter in a large nonstick skillet over medium heat. Add eggs, scramble and cook for 3 minutes; stirring occasionally.
  • Stir in cheddar until melted. Add in baby spinach and tomatoes, stir to combined.
  • Place two slices of ham on a cutting board. Top with a big spoonful of scrambled eggs and roll up.
  • Repeat the process until no scramble eggs and bacon remain.
  • Lay roll-ups in a shallow baking dish and broil until ham is crispy, for 5 minutes.
  • Remove, let cool for a few minutes and serve.
