Watermelon Caprese

If you are finding something fresh and fruitful to get into summer’s spirit, this Watermelon Caprese is the way to go. Watermelon is cut into thick squares, then arranged alternatively with mozzarella slices. They’re finished off with sprinkles of basil, flaky sea salt, and pepper, and drizzles of olive oil and balsamic glaze. Who can resist them? I know that I can’t.

Watermelon Caprese is one of my favorite recipes for watermelon. It’s a “must-taste” summer treat of us at family gathering. Yummy!

Ingredients

  • 1 small watermelon, sliced

  • 1 mozzarella ball, sliced

  • 2 tbsp. sliced fresh basil

  • extra-virgin olive oil

  • balsamic glaze

  • Flaky sea salt

  • Freshly ground black pepper

Directions

  • Cut watermelon into 1/2” thick squares, about 3”-x- 3”. Slice mozzarella into 1/2” slices.
  • On a serving dish, alternate slices of mozzarella and watermelon.
  • Sprinkle with basil, flaky sea salt and pepper.
  • Drizzle with olive. Serve.
