If you’re finding something good yet easy to make for breakfast, these breakfast dogs are the way to go. I just love them, and hopefully, you do, too.
1 lb. breakfast sausage
4 hot dog buns, toasted
1/2 lb. bacon, cut into 1″ pieces
4 large eggs
1 tbsp. extra-virgin olive oil
1 tbsp. butter
Freshly ground black pepper
2 tbsp. fresh chives
Hot sauce, for garnish
- Heat olive oil in a medium skillet over medium heat. Prick sausages all over with a fork and add to skillet in an even layer. Cook until golden on all sides, about 5 minutes per side. Set aside.
- Fry bacon in a medium nonstick pan over medium heat until crispy. Remove and transfer to a plate lined with paper towel to drain. Reserve about 1 tablespoon bacon fat in pan.
- Bring pan to medium heat and crack eggs inside. Season eggs with salt and pepper and cook until whites are set, about 5 minutes.
- Butter hot dog buns. Add sausage and bacon, then top with eggs, chives, and hot sauce.
