Roasted Cabbage Wedges with Lemon Garlic Butter
Our family just love cabbage! Roasted, stir fried, stuffed, salad, soup and casserole are all served at our meals. And, one of the best dishes we love to make all year is roasted cabbage wedged with lemons garlic butter. I come to this crazy good side by chance. I wanted something less boring to serve alongside the meal and found its recipe on Internet. I gave it a try and it successfully got my family hooked. Yummy!
Roasted cabbage wedges are a healthy and flavorful side dish. Cabbage is first cut into pieces (wedges), brushed with olive oil and sprinkled with salt and pepper, then roasted in the oven. minutesRoasted cabbage wedges are a healthy and flavorful side dish. Cabbage is first cut into pieces (wedges), brushed with olive oil and sprinkled with salt and pepper, then roasted in the oven. Once done, they are brushed with lemon garlic butter and served warm.
Ingredients
- Roasted Cabbage
1 medium green cabbage
2 tbsp. olive oil
sprinkle of salt and pepper
- Lemon Garlic Butter
4 tbsp. unsalted butter
1 tbsp. minced garlic (about 4 cloves)
1 tbsp. freshly squeezed lemon juice
sprinkle of salt and pepper
Directions
- Roasting Cabbage
- Preheat oven to 400 degree F. Prepare a large cookie sheet lined with foil.
- Take off outer leaves of green cabbage. Using a large knife, cut cabbage in half, then in quarters to create 8 pieces. Leave stem and core on.
- Place cabbage on cookie sheet. Brush both sides with olive oil and sprinkle with salt and black pepper.
- Roast for 20 minutes, then carefully flip and roast for more 20 minutes; until slightly brown around the edges and fork tender.
- Making Lemon Garlic Brown Butter
- Melt unsalted butter in a small saucepan over medium high heat.
- Add garlic and stir constantly until butter and garlic turn golden brown.
- Remove from heat and pour into a small bowl.
- Add lemon juice and sprinkle of salt and pepper into bowl. Stir again and adjust seasonings to taste.
- Once cabbage is done, brush with lemon garlic butter on each wedge.
- Cut off core and serve warm with a bowl of Dublin coddle and boxty bread.
