Garlic Roasted Cabbage Wedges

This is my family’s new favorite side dish! Garlic roasted cabbage wedges. Cabbage wedges are brushed evenly with a mixture of olive oil, minced garlic and marjoram; seasoned with salt and pepper (to taste), then roasted in preheated oven until done (top starts to brown). They are then garnished with parsley, drizzled with a flavorful dressing and served with crumbled bacon. Tasty and flavorful, these wedges are irresistible!

I was recommended these garlic roasted cabbage wedges by my mom. She gets retired and loves trying different meals now. When these wedges came to her, they got her hooked right away. She tells me the recipe so that I can serve it for my own family. What a lovely mom she is! I have no reason not to give them a try. My kids love it even though they are not fond of cabbage. How about my husband? He loves them because they’re low in carbs.

Ingredients

  • 1 large head green cabbage , sliced into 1-inch thick wedges

  • 3 cloves garlic

  • 3 1/2 tbsp. olive oil

  • 1 tsp dried marjoram

  • Salt and freshly ground black pepper

  • Minced fresh parsley , for garnish (optional)

  • Fresh lemon wedges or crumbled bacon , for serving (optional)

Directions

  • Preheat oven to 425 degrees F. Prepare a baking sheet lined with parchment paper or foil.
  • Pour olive oil into a small bowl. Press garlic through a garlic crusher into bowl.
  • Stir well to infuse garlic flavor. Pour and press mixture through a fine mesh strainer into another bowl to remove garlic pieces.
  • Stir marjoram into oil mixture.
  • Lay cabbage wedges on baking sheet. Brush both sides with olive oil mixture and season with salt and pepper.
  • Roast in preheated oven for 15 minutes. Remove, carefully flip cabbage over and continue to roast 15 minutes more.
  • Garnish with parsley if desired. Serve warm with bacon crumbles or spritz with lemon wedges. Enjoy!
