Ingredients
1 small head of cauliflower
1 1/2 cups shredded or diced cooked chicken
2 large eggs
1 1/2 cups frozen peas and carrots
2 tablespoons sesame oil
1 small white onion, chopped
2 cloves garlic, minced
Directions
- Rinse and drain cauliflower. Cut into large chunks.
- Pour cauliflower into a food processor, 2-3 batches. Blend until cauliflower is broken down and resembles rice pieces, about 10-15 pulses.
- Transfer cauliflower rice to a bowl and continue with remaining batches.
- Heat sesame oil in a large skillet over medium heat. Add onion and sauté for 3-4 minutes, until softened.
- Add peas, carrots, and garlic. Stir and cook until tender, about 2-3 minutes.
- Crack eggs into pan, scramble into small pieces and mix with vegetables.
- Stir in chicken, cauliflower rice and soy sauce. Toss to well combined and heated through, about 2-3 minutes more.
- Turn off heat and serve with extra soy sauce, if desired.
