Coastal Cobb Salad
It’s is one of my favorites in summer days! Coastal cobb salad. Like a typical cobb salad, it’s filled with chopped lettuce, tomato, crisp bacon, hard-boiled eggs, grilled or roasted chicken breast, hard-boiled eggs, avocado, and chives. Drizzled with a tasty and flavorful dressing on top, this salad is very taste-tantalizing. This coastal version, however, is added in cooked and peeled shrimp, making it more delicious.
This coastal cobb salad is also defined by its dressing. It’s a mix of mayonnaise, lemon juice and zest, minced cilantro, garlic powder, sea salt and water. Coming out juicy, creamy and flavorful, this dressing gets my family hooked, especially my kids. They even ask me to use this homemade sauce for other grilled chicken salads. Yummy!

Ingredients
INGREDIENTS
- For Cobb Salad
4 oz. cooked chicken breast, sliced
6 oz. cooked shrimp
1/4 cup crumbled cooked bacon
2 boiled eggs, halved
6 cups chopped romaine lettuce
1 avocado, chopped
1 cup grape or cherry tomatoes, halved
1 green onion, sliced
1/2 cup chopped cilantro
- For Cilantro Lemon Dressing
1/4 cup paleo mayonnaise
2 tsp fresh lemon juice
Zest of 1 lemon
3 tbsp. minced cilantro
1/4 tsp garlic powder
1/2 tsp sea salt
1 tbsp. water
Directions
- For Dressing
- Gather all ingredients for dressing a large bowl. Whisk well with hand or use an immersion blender or food processor.
- Cover and chill in the fridge until ready to use.
- For Salad
- Arrange all salad ingredients on a large platter.
- Line platter with romaine lettuce and then add toppings.
- Drizzle generously creamy cilantro lemon dressing on top.
- Serve!
