Crack Chicken Tacos
Crack Chicken Tacos are baked taco shells filled with refried beans, cooked shredded taco chicken and shredded Mexican blend cheese respectively. The tacos are then baked until cheese is fully melted and edges of the shells are browned. To best serve, they are topped with jalapenos, sour cream, cilantro, or salsa. Well, my mouth waters when reading here. I can’t resist them since the first time I tasted them.
If you are a fan of chicken tacos, you should give these a try. Delicious, flavorful and eye-catching, they are great to serve at both family meals and gatherings. I’m hosting a game day viewing party this weekend and plan to add it to the menu. I will serve it with salsa. Hope that my guests love it!
One more plus point of these crack chicken tacos is that it’s ready in less than 30 minutes. It means that you can serve them for meals even when you do not have a lot of time for cooking. Some may prefer fast foods or packaged foods in this case but they are not as healthy and tasty as homemade good. Let’s add them to your meal!

Ingredients
10 stand and stuff taco shells
1/2 pound cooked chicken, shredded
1 ounce Taco Seasoning (homemade or store bought)
2 cups Mexican blend cheese, shredded
1/2 cup onion, diced
1 can (14.5oz) diced tomato, fully drained
1 can (4.5oz) chopped green chiles, fully drained
8 ounces refried beans 1/2 can
1 tablespoon olive oil
Directions
- Preheat oven to 400 degrees F. Grease a 9×13 baking dish with nonstick spray.
- Heat a medium skillet with olive oil over medium heat.
- Add onion and fry for 2-3 minutes, or until translucent and fragrant.
- Stir in chicken, taco seasoning, tomatoes, and green chiles. Stir to well combined. Reduce heat to simmer and cook for 5-8 minutes.
- Place taco shells in the baking dish, standing up. Bake for 5 minutes until crisp up. Remove from the oven.
- Scoop a tablespoon of beans into the bottom of each taco shell. Top chicken mixture.
- Sprinkle generously with shredded cheese on top.
- Bring back to oven and bake for 7-10 minutes, until cheese is fully melted and edges of the shells are browned.
- Remove and add favorite toppings on top (jalapenos, sour cream, cilantro, and salsa,…)
- Serve immediately!
