Ingredients

  • 3 pounds cucumbers, sliced and peeled

  • 18 ounces light sour cream

  • 1 small yellow onion, chopped fine

  • 3/4 cup white distilled vinegar

  • 1 tbsp. granulated sugar

  • 1 tbsp. dried dill weed (or 2 teaspoons fresh chopped dill)

Directions

  • Peel cucumbers, cut into slices and set aside. Chop onion finely.
  • Gather sour cream, vinegar, sugar, and dill in a medium-size mixing bowl. Stir to combine. Taste and adjust vinegar and sugar if needed.
  • Add cucumbers and onions in bowl and mix well.
  • Cover and refrigerate for at least one hour before serving.
