Keto Green Chile Chicken

Keto Green Chile Chicken is one of the best keto meals that I have ever eaten. Chicken is seasoned with salt and pepper, seared until browned, added into a skillet of onion, green chili, and cream cheese. The chicken continues to be topped with sprinkles of grated Jack cheese, then covered and cooked until cheese is melted. It comes out savory and flavorful, thereby, tantalize your taste buds right with the first bites.

Actually I’m not a keto eater. I just love to try different chicken dishes. It makes our daily more appealing and my cooking time more interesting. When I was looking for something new to jazz up boring chicken meals, my friend recommended me this. I give it a try right away and made a great job with it. My kids crave for this low-carb chicken and my husband also gives it a nod. So good!

Chicken is seasoned with salt and pepper, seared until browned, added into a skillet of onion, green chili, and cream cheese. The chicken continues to be topped with sprinkles of grated Jack cheese, then covered and cooked until cheese is melted.

Ingredients

  • 1 lb chicken breasts

  • 8 ounces canned green chili

  • 1/2 onion, thinly sliced

  • 4 ounces cream cheese

  • 1 cup Monterey jack cheese, grated

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon salt

  • 1 tablespoon oil (avocado, coconut, lard, or tallow works great)

Directions

  • Heat oil in a 10.5″ skillet over medium-high heat.
  • Season chicken with spices then sear until browned, about 3-4 minutes per side. Remove and set aside.
  • Add onion and green chili to skillet, fry and cook for 3-4 minutes, until onion is tender. Add in cream cheese and chicken.
  • Sprinkle with jack cheese on top. Cover with a lid and cook for more 3-4 minutes, until the cheese is melted. Garnish with cilantro and serve.
