Ingredients

  • 2 boneless skinless chicken breasts

  • 3/4 tsp table salt

  • 3/4 tsp ground black pepper

  • Topping
  • 3 oz cream cheese

  • 3/4 oz shredded cheddar cheese

  • 3/4 oz finely chopped sun-dried tomatoes

  • 3 oz chopped fresh spinach leaves, stems removed

  • 1/2 tsp garlic powder

Directions

  • Preheat oven to 425 degree F.
  • Slice each chicken breast in half. Pat them with paper towels if needed.
  • Line a baking tray with parchment paper. Lay chicken pieces flat in a single layer on the parchment paper.
  • Season chicken with 1/2 salt and pepper. Flip and season the other side with other half of salt and pepper. Set aside.
  • In a pan on the stovetop, cook spinach until wilted. Separately, microwave cream cheese until very soft and easily mixed, about 20 seconds.
  • Combine cooked spinach, softened cream cheese, and all other topping ingredients in a bowl. Stir to combine. Spread an even layer of the mixture on top of chicken pieces.
  • Bake in preheated oven until chicken is cooked through, about 20 minutes. Remove and let it cool for 5 minutes before serving. Enjoy!

Notes

  • The baking time might be longer, depending on the size of your chicken pieces.
