24 oz. ground breakfast sausage
1 Vidalia onion, finely diced
2 tbsp. canola oil

6 eggs
1 pie crust dough
1/2 cup sour cream
1/2 cup heavy whipping cream
2/3 of the cooked sausage and onion mixture
salt

remaining 1/3 of the cooked sausage and onion mixture
1/4 cup all purpose flour
2 cups whole milk
fresh cracked black pepper

Directions
- Heat oil in a cooking pan over medium heat. Add diced onion and fry until transparent.
- Add sausage, breaking apart sausage as much as possible. Stir and cook until sausage completely done. Remove from heat.
- Quiche
- Preheat oven to 350°F. Coat a deep dish pie pan and gently fit pie crust in pan.
- Add eggs, sour cream, heavy whipping cream, salt, and pepper in a bowl. Whisk until smooth. Stir in 2/3 of cooked sausage mixture.
- Spread egg and sausage mixture evenly into pan. Place on a baking sheet and bake for 40-45 minutes.
- Sausage Gravy
- Heat up remaining sausage over medium heat. Sprinkle flour over it. Stir to well combined.
- Pour in milk while stirring constantly but slowly.
- Reduce heat to low and let it cook until thickened. Remove from heat.
- Once quiche is done, remove and let it rest a little. Cut into slice and spread with some gravy on top.
