Ingredients
4 cups cooked and chilled rice
2 eggs, whisked
2 medium carrots, peeled and diced
3 cloves garlic, minced
1 small white onion, diced
3 green onions, thinly sliced
1/2 cup frozen peas
3–4 tablespoons soy sauce, or more to taste
1/2 teaspoons toasted sesame oil
3 tablespoons butter, divided
salt and pepper
2 teaspoons oyster sauce (optional)
Directions
- Melt 1/2 tablespoon butter in a large sauté pan over medium-high heat. Add egg, and cook until scrambled; stirring occasionally. Transfer to a separate plate.
- Add more 1 tablespoon butter to pan and heat until melted. Add carrots, onion, peas and garlic. Season with salt and pepper. Fry for about 5 minutes or until onion and carrots are tender.
- Increase heat to high, add in remaining butter and melt. Stir in rice, green onions, soy sauce and oyster sauce (if using). Cook for 3 minutes to fry rice; stirring often.
- Return eggs to skillet and stir to combine.
- Remove heat, and drizzle with sesame oil. Stir until combined.
- Serve immediately, or refrigerate in an airtight container for up to 3 days.
