Parmesan Ranch Chicken
Parmesan Ranch Chicken is my family’s new favorite for dinner! It’s ready in less than a hour and can be eaten with a number of ingredients. Vegetables (boiled or baked), rice, quinoa, pasta or noodles does a great job. My family prefers eating this with rice and boiled green beans or asparagus. They combine well with others. Yummy!

Ingredients
3 large boneless, skinless chicken breasts
1/2 cup crushed tortilla chips or ritz crackers, panko or bread crumbs
2 tablespoons dry ranch dressing
1/3 cup parmesan cheese
1/4 cup unsalted butter, melted
Directions
- Preheat oven to 375°F.
- Cut chicken breasts in half horizontally to create 6 fillets.
- Gather crumbs, parmesan cheese and ranch in a shallow bowl. Combine well.
- Dip chicken in butter, and then roll in crumb mixture to coat. Place on a sheet pan.
- Bake for 25-30 minutes, or until chicken is cooked through. Serve over brown or white rice with vegetables if desired.
