Parmesan Ranch Chicken

Parmesan Ranch Chicken is my family’s new favorite for dinner! It’s ready in less than a hour and can be eaten with a number of ingredients. Vegetables (boiled or baked), rice, quinoa, pasta or noodles does a great job. My family prefers eating this with rice and boiled green beans or asparagus. They combine well with others. Yummy!

Chicken breasts are sliced into fillets then dip in the creamy mixture of crumbs, parmesan cheese and ranch dressing. Ingredients

  • 3 large boneless, skinless chicken breasts

  • 1/2 cup crushed tortilla chips or ritz crackers, panko or bread crumbs

  • 2 tablespoons dry ranch dressing

  • 1/3 cup parmesan cheese

  • 1/4 cup unsalted butter, melted

Directions

  • Preheat oven to 375°F.
  • Cut chicken breasts in half horizontally to create 6 fillets.
  • Gather crumbs, parmesan cheese and ranch in a shallow bowl. Combine well.
  • Dip chicken in butter, and then roll in crumb mixture to coat. Place on a sheet pan.
  • Bake for 25-30 minutes, or until chicken is cooked through. Serve over brown or white rice with vegetables if desired.
