Slow Cooker Queso Chicken Tacos

Ingredients

  • Taco shells, hard or soft

  • 2 pounds boneless skinless chicken breasts

  • 1 packet Taco seasoning (or homemade)

  • 3/4 cup salsa Con Queso

  • 1 can of Rotel with lime juice and cilantro

  • 4 ounce can mild diced green chiles

  • 1/2 cup chicken broth

  • Toppings (optional): lettuce, tomato, cheddar cheese, onions, jalapenos, sour cream, guacamole, fresh lime, cilantro, hot sauce, queso

Directions

  • Lightly spray a slow cooker with non-stick cooking spray.
  • Place chicken, at bottom, in single layer and sprinkle with taco seasoning.
  • Gather Rotel, green chiles and chicken broth in a large bowl. Mix to combine. Pour mixture evenly over chicken.
  • Cook on low for 6-8 hours, or on high for 4-6 hours.
  • Once done, drain excess liquids. leaving just a smidgen behind. Then shred chicken with two forks. Last, spoon queso on top and gently mix with chicken; coating evenly.
  • Cover and cook on low for 20 minutes until heated through.
  • Lay out tortillas and spread with chicken mixture. Top with toppings of your choice.
  • Serve immediately!
