1 cup Minute Rice
1 large egg
2 tbsp. soy sauce (low-sodium)
1 cup vegetables, fresh or frozen
1 tbsp. vegetable oil
1 tbsp. garlic minced
1 cup water
1 pinch salt to taste
1 pinch black pepper to taste
Directions
- Combine water with soy sauce in a small saucepan over medium heat. Bring to a boil.
- Once bubbling, add uncooked rice and let stand, covered, for 5 minutes, according to package directions.
- Heat vegetable oil in a skillet over medium heat. Add garlic, vegetables, and salt and pepper to taste. Sauté for 3-5 minutes or until garlic begins to turn golden brown.
- Crack egg directly into skillet and scramble to combine with other ingredients. Cook for 2-3 minutes.
- Add cooked rice in skillet. Stir to combine with eggs, vegetables and garlic, for about 2 minutes.
- Remove from heat and serve immediately.
