Ingredients

  • 1 cup Minute Rice

  • 1 large egg

  • 2 tbsp. soy sauce (low-sodium)

  • 1 cup vegetables, fresh or frozen

  • 1 tbsp. vegetable oil

  • 1 tbsp. garlic minced

  • 1 cup water

  • 1 pinch salt to taste

  • 1 pinch black pepper to taste

Directions

  • Combine water with soy sauce in a small saucepan over medium heat. Bring to a boil.
  • Once bubbling, add uncooked rice and let stand, covered, for 5 minutes, according to package directions.
  • Heat vegetable oil in a skillet over medium heat. Add garlic, vegetables, and salt and pepper to taste. Sauté for 3-5 minutes or until garlic begins to turn golden brown.
  • Crack egg directly into skillet and scramble to combine with other ingredients. Cook for 2-3 minutes.
  • Add cooked rice in skillet. Stir to combine with eggs, vegetables and garlic, for about 2 minutes.
  • Remove from heat and serve immediately.
