Kielbasa, Peppers, and Potato Hash

14 oz turkey kielbasa cut into 1/4″ rounds
1 lb potatoes, thinly sliced into bite-sized pieces
1 onion, thinly sliced
1 bell peppers 1 to 2, chopped
2 tbsp. extra-virgin olive oil
1 tbsp. unsalted butter
salt and pepper to taste
Directions
- Heat olive oil and butter in a large skillet over medium-high heat. Add potatoes and season with salt and pepper to taste.
- Cook until browned on one side, 6 to 7 minutes. Flip and cook for another 4-5 minutes; until golden brown.
- Remove from the skillet with a slotted spoon.
- Add another tablespoon of olive oil into the skillet if needed.
- Add kielbasa and cook for 2 to 3 minutes on each side, until lightly browned.
- Add onions and pepper. Continue to cook until onions are soft and translucent and peppers and tender; stirring frequently. Season with salt and pepper.
- Return potatoes to skillet and cook for another minute or two. Adjust seasonings and serve.
