Ingredients

  • 14 oz turkey kielbasa cut into 1/4″ rounds

  • 1 lb potatoes, thinly sliced into bite-sized pieces

  • 1 onion, thinly sliced

  • 1 bell peppers 1 to 2, chopped

  • 2 tbsp. extra-virgin olive oil

  • 1 tbsp. unsalted butter

  • salt and pepper to taste

Directions

  • Heat olive oil and butter in a large skillet over medium-high heat. Add potatoes and season with salt and pepper to taste.
  • Cook until browned on one side, 6 to 7 minutes. Flip and cook for another 4-5 minutes; until golden brown.
  • Remove from the skillet with a slotted spoon.
  • Add another tablespoon of olive oil into the skillet if needed.
  • Add kielbasa and cook for 2 to 3 minutes on each side, until lightly browned.
  • Add onions and pepper. Continue to cook until onions are soft and translucent and peppers and tender; stirring frequently. Season with salt and pepper.
  • Return potatoes to skillet and cook for another minute or two. Adjust seasonings and serve.
