1 medium cucumber, seeded, halved, and thinly sliced
2 cups roasted or canned beets, cut into 1/2″ pieces
4 oz. feta cheese crumbled
1/4 cup fresh dill, roughly chopped
1 tbsp. lemon juice
1/2 tsp kosher salt
3 tbsp. extra-virgin olive oil
Directions
- Add lemon juice and kosher salt in a small bowl. Whisk until salt is dissolved.
- Stir in extra-virgin olive oil gradually until all ingredients are well combined.
- Add sliced beets in a large bowl. Pour half of dressing to bowl and mix together. Set aside.
- Before serving, add cucumber, feta cheese, fresh dill and remaining dressing to bowl and toss together. Enjoy!
