Ingredients

  • 12 cups spinach leaves

  • 4 eggs, hard boiled, peeled and chopped

  • 4 cooked crispy bacon slices, cooled and crumbled

  • 1 clove garlic

  • 2 tbsp. red wine vinegar

  • 1 tbsp. Dijon

  • 3 tbsp. extra-virgin olive oil

  • 1/2 tsp kosher salt

  • Freshly ground pepper to taste

Directions

  • Smash and peel garlic clove. Mince and mash with salt form a paste; using side of a chef’s knife.
  • Pour into a medium bowl. Whisk in vinegar and Dijon. Add in oil. Season with pepper and set aside.
  • Gather spinach, eggs and bacon in a large salad bowl. Mix to combine.
  • Drizzle garlic dressing over salad. Toss to combine.
  • Serve.
