Ingredients

  • 3 lbs. yellow potatoes, scrubbed, and then diced into 1/2″ cubes or 1/4″ slices

  • 1 lb. bacon, cooked drained and chopped into 1/2″ to 1″ pieces

  • 1 large sweet onion, diced

  • 8 oz. shredded Crystal Farms 6 Cheese Italian

  • 8 oz. shredded Crystal Farms Cheddar

  • 1/3 c. water

  • kosher salt

  • 7 tbsp. unsalted butter

  • 1 tbsp. chopped fresh chives

  • 1 tbsp. chopped fresh rosemary

  • 1 tbsp. chopped fresh thyme

  • 1 tbsp. fresh parsley

  • freshly ground black pepper

Directions

  • Preheat grill to 325° F – 350° F.
  • Coat a cast iron skillet with a tablespoon of unsalted butter. Add half of potatoes, spreading out in an even layer.
  • Drizzle with water. Dot with 3 tablespoons of butter. Sprinkle with salt and pepper, as desired. Add 2/3 of onion, followed by 2/3 of bacon. Sprinkle with half of herbs.
  • Add 1-1/2 cups of 6 Cheese Italian and 1 cup of cheddar. Add remaining potatoes and dot remaining butter. Sprinkle with salt and pepper.
  • Top with remaining onion, bacon, and herbs. Sprinkle with remaining 6 Cheese Italian on top, finishing with remaining Cheddar.
  • Poke a few pieces of bacon up through the cheese, if desired.
  • Cover skillet with foil. Place on preheated grill grates.
  • Check potatoes after 30 minutes of grilling. Adjust temperature if needed.
  • Cook for 20-30 minutes more, or until potatoes are very tender.
  • Remove foil and cook for a few minutes more to brown up cheese, if desired. Remove from heat and let it rest for a few minutes before serving.
  • Sprinkle with black pepper and chopped herbs, if desired. Enjoy!
