Ingredients

  • 24 oz. potatoes, scrubbed clean and peeled

  • 4 large eggs

  • 1/4 cup shredded mozzarella or cheddar cheese

  • 7 oz. diced bacon, trimmed off fat

  • 2 scallions or spring onions, (shallots) trimmed and finely sliced

  • 2 tablespoons olive oil or coconut oil

  • Cracked pepper to season

Directions

  • Dice potatoes into small 3/4-inch cubes.
  • Heat oil in a large cast iron skillet or pan over medium heat. Add potatoes, fry and cook until golden and crispy, about 20 minutes; stirring occasionally.
  • To speed up the process, cover skillet with a lid, check potatoes up every 4-5 minutes or so to stir them, about 15 minutes.
  • Add bacon pieces and fry until crisp, about 10 minutes; stirring occasionally.
  • Add spring onions; stir them through and season with pepper (optional). Reserve grease of bacon to cook eggs.
  • Make four wells in hash; using a wooden spoon or spatula. Crack an egg into each. Sprinkled with mozzarella on and around top.
  • Fry until whites are set and eggs are cooked to your liking.
  • Serve immediately!
