Baked Cheddar Eggs and Potatoes is one of our family’s favorites for breakfast. It’s cheesy, tasty and loaded with flavor. “Your taste buds are all in a treat” and “It almost melts in my mouth right with the first bite” are what my kids and husband commented on this breakfast skillet. And me? I just love all the foods made with potatoes and eggs. Delicious and impressive!

Ingredients
1 1/2 lb red potatoes, chopped
8 large eggs
3/4 cup shredded extra-sharp cheddar cheese
1/4 cup minced parsley fresh
3 tbsp. butter
2 tsp minced garlic
1/8 tsp pepper
1 – 1 1/2 tsp garlic salt
Directions
- Preheat oven to 400 degrees F.
- Melt butter in a 10-in. ovenproof skillet over medium heat. Add potatoes, stir and cook until tender.
- Add in parsley, garlic, garlic salt and pepper. Stir well.
- Using back of a spoon, make four wells in mixture. Crack two eggs and pour into each well.
- Place in the oven and bake for 10-12 minutes. Remove and sprinkle with cheese. Bring back to oven and cook for 1-2 minutes to melt cheese.
- Remove and let it cool for 5 minutes. Serve.
