Ingredients

  • 1 medium cucumber, seeded, halved, and thinly sliced

  • 2 cups roasted or canned beets, cut into 1/2″ pieces

  • 4 oz. feta cheese crumbled

  • 1/4 cup fresh dill, roughly chopped

  • 1 tbsp. lemon juice

  • 1/2 tsp kosher salt

  • 3 tbsp. extra-virgin olive oil

Directions

  • Add lemon juice and kosher salt in a small bowl. Whisk until salt is dissolved.
  • Stir in extra-virgin olive oil gradually until all ingredients are well combined.
  • Add sliced beets in a large bowl. Pour half of dressing to bowl and mix together. Set aside.
  • Before serving, add cucumber, feta cheese, fresh dill and remaining dressing to bowl and toss together. Enjoy!
