Broccoli Cauliflower Salad
It is one of my guilt pleasure! Creamy cauliflower and broccoli salad. Cauliflower pairs perfectly with broccoli, along with bacon, cubed Colby Jack cheese, plain Greek yogurt and mayonnaise. This crazy good mix almost melts in your mouth right with the first bite. I just can’t help falling in love with it. Yummy!
Both low in carbs while containing a lot of vitamins and minerals, broccoli and cauliflower are worth adding to daily meal. Roast, bake, stir fry, soup or salad, you can make a lot of good side dishes with them. And then, broccoli and cauliflower salad is worth recommending. If you are big fans of these two veggies, you should never miss this super salad. Actually, my kids do not eat broccoli and cauliflower often as they find them quite boring. When they tried this salad for the first time, they fell for it right away.

Ingredients
- For Dressing
3/4 cup fat-free plain Greek yogurt
1/2 cup light mayonnaise
2 tbsp. red wine vinegar
1 tbsp. granulated sugar
1/4 cup honey
1/4 tsp salt , or more to taste
- For Salad
4 cups small diced broccoli florets
4 cups small diced cauliflower florets
8 sliced bacon, diced and fried until crispy and drained
1/2 cup chopped red onion, rinsed under water and drained
1 1/4 cups small cubed Colby Jack cheese
Directions
- Add all ingredients for dressing to a mixing bowl. Whisk to well combined. Cover with plastic bag and chill until ready to use.
- Add all ingredients for salad to a salad bowl. Stir to combine.
- Pour dressing over top of salad. Toss to coat evenly.
- Serve within an hour for best taste and flavor. Enjoy!
