- For Salad
1 English cucumber, diced
1 tomato, diced
2 tsp red wine vinegar
3 tbsp. chopped fresh basil
1 tbsp. olive oil
1 clove garlic, minced
salt and pepper to taste
- For Serving
1 baguette

Directions
- Gather cucumber, tomato, vinegar, basil, olive oil and garlic in a large mixing bowl. Gently toss to combine.
- Cut baguette into 3/4″ slices and brush top with olive oil.
- Broil 2-3 minutes, until lightly toasted.
- Remove from oven and rub each with the fresh clove of garlic.
- Spread a spoonful of cucumber mixture bread slice. Serve immediately.
