Ingredients

  • For Salad
  • 1 English cucumber, diced

  • 1 tomato, diced

  • 2 tsp red wine vinegar

  • 3 tbsp. chopped fresh basil

  • 1 tbsp. olive oil

  • 1 clove garlic, minced

  • salt and pepper to taste

  • For Serving
  • 1 baguette

  • olive oil

  • 1 clove garlic

Directions

  • Gather cucumber, tomato, vinegar, basil, olive oil and garlic in a large mixing bowl. Gently toss to combine.
  • Cut baguette into 3/4″ slices and brush top with olive oil.
  • Broil 2-3 minutes, until lightly toasted.
  • Remove from oven and rub each with the fresh clove of garlic.
  • Spread a spoonful of cucumber mixture bread slice. Serve immediately.
