Farmer’s Breakfast Skillet

Ingredients
1 egg
2 slices bacon
1 potato, diced
1 green onion, finely chopped
salt and pepper
Directions
- Cut bacon into bite-size pieces and fry until crispy. Transfer to a plate and set aside.
- Add diced potato to skillet and cook until almost done.
- Add chopped green onion during the last minute of cooking.
- Bring bacon back to skillet and stir to combine.
- Season with salt and pepper to taste.
- Crack in one egg at the middle of the skillet. Cover with a lid and turn of heat.
- Cook until egg reaches your desire. Remove and serve warm.
