Ingredients

  • 8 corn tortillas, cut into eighths

  • 6 large eggs

  • 1/2 teaspoon coarse kosher salt

  • 3 tablespoons olive oil

  • Topping (optional)
  • chopped cilantro, diced tomatoes, Queso fresco

Directions

  • Heat olive oil in a large nonstick skillet over medium-high heat.
  • Crack eggs in a medium bowl. Whisk well and set aside.
  • Add corn tortillas to skillet and fry until crispy, about 6 to 8 minutes.
  • Add whisked eggs, salt and fold them into crispy tortillas. Cook for about 2 to 4 minutes, until eggs are fully cooked.
  • Remove from heat and season with salt to taste.
  • Serve with chopped cilantro, diced tomatoes and queso fresco, if desired.
  • Enjoy!
