8 corn tortillas, cut into eighths
6 large eggs
1/2 teaspoon coarse kosher salt
3 tablespoons olive oil
- Topping (optional)
chopped cilantro, diced tomatoes, Queso fresco
Directions
- Heat olive oil in a large nonstick skillet over medium-high heat.
- Crack eggs in a medium bowl. Whisk well and set aside.
- Add corn tortillas to skillet and fry until crispy, about 6 to 8 minutes.
- Add whisked eggs, salt and fold them into crispy tortillas. Cook for about 2 to 4 minutes, until eggs are fully cooked.
- Remove from heat and season with salt to taste.
- Serve with chopped cilantro, diced tomatoes and queso fresco, if desired.
