Ham, Egg and Cheese RollUps

Actually my family, especially my picky kids can’t. They fell for them right at the first time they tasted them. I made a good job, right?

Ingredients
10 eggs
20 ham slices
1 1/2 cup shredded cheddar
1 cup baby spinach
1 cup chopped tomatoes
2 tsp. garlic powder
2 tbsp. butter
Kosher salt
Freshly ground black pepper
Directions
- Preheat a broiler.
- Crack eggs in a large bowl. Whisk in garlic powder until combined. Season with salt and pepper.
- Melt butter in a large nonstick skillet over medium heat. Add eggs, scramble and cook for 3 minutes; stirring occasionally.
- Stir in cheddar until melted. Add in baby spinach and tomatoes, stir to combined.
- Place two slices of ham on a cutting board. Top with a big spoonful of scrambled eggs and roll up.
- Repeat the process until no scramble eggs and bacon remain.
- Lay roll-ups in a shallow baking dish and broil until ham is crispy, for 5 minutes.
- Remove, let cool for a few minutes and serve.
