Bean, Potato, & Veggie Vegan Breakfast Hash

Ingredients

  • 4 cups potatoes, peeled and cubed

  • 1 can pinto beans, drained and rinsed

  • 1 cup squash, chopped

  • 1 red bell pepper, chopped

  • 1 cup zucchini, chopped

  • 1/2 cup mushrooms, sliced

  • 1.5 tsp garlic powder

  • 1.5 tsp onion powder

  • 1/2 tsp paprika

  • pinch of chili flakes

  • salt and pepper to taste

Directions

  • Pre-heat oven to 425 degrees F. Prepare 2 baking sheets, one with lined with parchment paper and one not.
  • Toss potatoes with salt and pepper. Spread out on baking sheet and bake for 25 minutes. Toss and put back into oven.
  • Combine veggies, beans, and spices in second baking dish. Place in oven, next to potatoes and bake both for 15 minutes.
  • Combine potatoes with veggies and beans. Season with more salt and pepper if desired
  • Serve!
