Bean, Potato, & Veggie Vegan Breakfast Hash

4 cups potatoes, peeled and cubed
1 can pinto beans, drained and rinsed
1 cup squash, chopped
1 red bell pepper, chopped
1 cup zucchini, chopped
1/2 cup mushrooms, sliced
1.5 tsp garlic powder
1.5 tsp onion powder
1/2 tsp paprika
pinch of chili flakes
salt and pepper to taste
Directions
- Pre-heat oven to 425 degrees F. Prepare 2 baking sheets, one with lined with parchment paper and one not.
- Toss potatoes with salt and pepper. Spread out on baking sheet and bake for 25 minutes. Toss and put back into oven.
- Combine veggies, beans, and spices in second baking dish. Place in oven, next to potatoes and bake both for 15 minutes.
- Combine potatoes with veggies and beans. Season with more salt and pepper if desired
- Serve!
