2 small cucumbers, sliced
2 cups cauliflower florets
1 (15oz) can corn, drained
1/2 red pepper, cubed
2-3 green onions, finely cut
1/3 – 1/2 cup mayonnaise
salt and pepper, to taste
fresh dill, optional
Directions
- Gather cucumber, cauliflower florets, corn, pepper and onion in a large mixing bowl. Mix to combine.
- Stir in mayo, and season with salt and pepper to taste. Toss to evenly coated.
- Garnish with dill, if desired.
- Serve immediately or chill in the fridge until ready to serve.
