One Pot Unstuffed Cabbage Rolls

1 small green cabbage head, chopped (about 4 cups)
1 lb lean ground beef
2-3 garlic cloves, minced
1/2 cup beef broth
2 cans diced tomatoes
1/2 cup onion, diced
1 8oz can tomato sauce
1 tsp paprika
1 tbsp. brown sugar
2 tsp salt
1 tsp pepper
Directions
- Heat a large deep skillet or Dutch oven with oil over medium heat. Add ground beef, onion and garlic. Stir and break up beef for 5-7 minutes, until beef is browned and crumbly.
- Transfer to a dish, drain and discard grease.
- Add cabbage, tomatoes, tomato sauce, broth, paprika, sugar, salt, and pepper to skillet. Stir to combine and bring to a boil.
- Cover with a lid and reduce heat to low. Simmer until cabbage is tender, about 30 minutes. Serve.
